Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced

  • 1 red onion, sliced
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix soy sauce, honey, olive oil, garlic, and ginger to create the marinade.
  3. Place the chicken thighs in a large bowl and pour the marinade over them. Let it marinate for at least 30 minutes.
  4. On a sheet pan, arrange the marinated chicken, pineapple chunks, bell peppers, and onion.
  5. Season with salt and pepper.
  6. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
