- 4 boneless, skinless chicken thighs
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 red onion, sliced
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix soy sauce, honey, olive oil, garlic, and ginger to create the marinade.
- Place the chicken thighs in a large bowl and pour the marinade over them. Let it marinate for at least 30 minutes.
- On a sheet pan, arrange the marinated chicken, pineapple chunks, bell peppers, and onion.
- Season with salt and pepper.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
