- 1 cup orzo pasta
- 200g feta cheese
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, combine the orzo, cherry tomatoes, spinach, olive oil, garlic powder, salt, and pepper.
- Place the feta cheese on top of the mixture.
- Bake in the preheated oven for 25-30 minutes, or until the orzo is cooked and the feta is golden.
- Remove from the oven and stir to combine.
- Garnish with fresh basil before serving.
Notes
- Feel free to add other vegetables like bell peppers or zucchini.
- This dish can be served warm or at room temperature.
- Leftovers can be stored in the refrigerator for up to 3 days.
