  • 1/4 teaspoon paprika

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture.
  2. In a large bowl, combine the grated zucchini, flour, Parmesan cheese, egg, green onions, garlic, salt, pepper, and paprika. Mix well.
  3. Heat olive oil in a skillet over medium heat.
  4. Drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly.
  5. Cook for 3-4 minutes on each side or until golden brown.
  6. Remove from the skillet and place on paper towels to drain excess oil.
  7. Serve warm with your favorite dipping sauce.
