Hearty Lentil & Vegetable Stew: A Comforting Delight!

Ingredients

  • 1 cup lentils
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, diced
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat some oil over medium heat and sauté the onion, garlic, carrots, and celery until softened.
  3. Add the bell pepper and zucchini, cooking for an additional 5 minutes.
  4. Stir in the lentils, diced tomatoes, vegetable broth, thyme, and cumin.
  5. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
  6. Season with salt and pepper to taste before serving.

Notes

  • Feel free to add any other vegetables you have on hand.
  • This stew can be stored in the refrigerator for up to 5 days.
  • It can also be frozen for up to 3 months.
