Ingredients

- 1 cup lentils
- 2 carrots, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 celery stalks, diced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat some oil over medium heat and sauté the onion, garlic, carrots, and celery until softened.
- Add the bell pepper and zucchini, cooking for an additional 5 minutes.
- Stir in the lentils, diced tomatoes, vegetable broth, thyme, and cumin.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
- Season with salt and pepper to taste before serving.
Notes
- Feel free to add any other vegetables you have on hand.
- This stew can be stored in the refrigerator for up to 5 days.
- It can also be frozen for up to 3 months.
