Ingredients

- 4 bell peppers
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1 clove garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix together the ricotta cheese, Parmesan cheese, basil, parsley, garlic, salt, and pepper.
- Stuff the mixture into the bell peppers.
- Drizzle olive oil over the stuffed peppers.
- Place the peppers in a baking dish and cover with foil.
- Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until the tops are golden.
- Serve warm and enjoy!
Notes
- Feel free to add other herbs like thyme or oregano for extra flavor.
- These can be made ahead of time and stored in the refrigerator before baking.
