Ingredients

  • 4 bell peppers
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix together the ricotta cheese, Parmesan cheese, basil, parsley, garlic, salt, and pepper.
  4. Stuff the mixture into the bell peppers.
  5. Drizzle olive oil over the stuffed peppers.
  6. Place the peppers in a baking dish and cover with foil.
  7. Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until the tops are golden.
  8. Serve warm and enjoy!
