Herby Ricotta Stuffed Peppers That Will Delight You!


Description

Delicious bell peppers stuffed with a creamy herbed ricotta filling, perfect for a light meal or appetizer.


Ingredients

  • 4 large bell peppers
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix together the ricotta, Parmesan, basil, parsley, garlic, salt, and pepper.
  4. Stuff the mixture into the bell peppers.
  5. Drizzle olive oil over the stuffed peppers.
  6. Place the peppers in a baking dish and cover with foil.
  7. Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until golden.
  8. Serve warm and enjoy!

Notes

  • Feel free to add other herbs like thyme or oregano for extra flavor.
  • These can be made ahead of time and baked just before serving.
