- 2 cups fresh or frozen cherries, pitted

Instructions
- Preheat the oven to 400°F (200°C).
- In a saucepan, combine cherries, sugar, cornstarch, and vanilla extract. Cook over medium heat until the mixture thickens.
- Roll out the puff pastry sheets on a floured surface and cut them into squares.
- Place a spoonful of the cherry mixture in the center of each square.
- Fold the pastry over to form a triangle and seal the edges with a fork.
- Brush the tops with beaten egg for a golden finish.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Let cool slightly, then dust with powdered sugar before serving.
Notes
- For a richer flavor, add a pinch of almond extract to the cherry filling.
