Description

Delicious and warm English muffins, perfect for breakfast, brunch, or any meal, with a unique texture and endless topping possibilities.


Ingredients

  • 1 ¼ cups warm milk (not hot)
  • 3 tablespoons melted butter
  • 1 large egg
  • 2 tablespoons sugar
  • 2 ¼ teaspoons instant yeast
  • 1 teaspoon salt
  • 3 cups all-purpose flour (spooned and leveled)
  • ¼ cup cornmeal (for sprinkling)

Instructions

  1. Combine the warm milk, melted butter, egg, sugar, yeast, and salt in the bowl of your stand mixer. Allow these ingredients to mingle for about five minutes.
  2. Gradually mix in the flour with the dough hook attached. Blend for 7-8 minutes until the dough is smooth and elastic.
  3. Cover the bowl with a kitchen towel and let the dough rise in a warm area for 60-90 minutes, until doubled in size.
  4. Prepare a baking sheet by sprinkling it with cornmeal.
  5. Punch down the dough and transfer it to a floured surface, rolling it into a rectangle about ¾ inch thick.
  6. Cut 2 ½ inch circles using a round cutter and place on the prepared baking sheet.
  7. Cover the muffins with a towel and let them rise for another 30 minutes until puffy.
  8. Preheat your skillet over medium-low heat, greasing with butter. Cook muffins for 7-8 minutes on each side until golden brown.

Notes

Store your English muffins in an airtight container at room temperature for up to 3 days. Freeze for longer storage.
