- 1 ¼ cups warm milk (not hot)
- 3 tablespoons melted butter
- 1 large egg
- 2 tablespoons sugar
- 2 ¼ teaspoons instant yeast
- 1 teaspoon salt
- 3 cups all-purpose flour (spooned and leveled)
- ¼ cup cornmeal (for sprinkling)
Instructions
- Combine the warm milk, melted butter, egg, sugar, yeast, and salt in the bowl of your stand mixer. Allow these ingredients to mingle for about five minutes.
- Gradually mix in the flour with the dough hook attached. Blend for 7-8 minutes until the dough is smooth and elastic.
- Cover the bowl with a kitchen towel and let the dough rise in a warm area for 60-90 minutes, until doubled in size.
- Prepare a baking sheet by sprinkling it with cornmeal.
- Punch down the dough and transfer it to a floured surface, rolling it into a rectangle about ¾ inch thick.
- Cut 2 ½ inch circles using a round cutter and place on the prepared baking sheet.
- Cover the muffins with a towel and let them rise for another 30 minutes until puffy.
- Preheat your skillet over medium-low heat, greasing with butter. Cook muffins for 7-8 minutes on each side until golden brown.
