- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- ½ tsp salt
- 1 cup milk
- 1 egg
- 2 tbsp melted butter
- 2 tbsp maple syrup
- 6 sausage patties (cooked and flattened)
- 6 eggs (scrambled or fried)
- 6 slices American cheese
- Optional: Sharp cheddar cheese, turkey sausage, hot honey
Instructions
- Preheat your oven to 350°F (175°C) and grease your muffin tin generously.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the milk, egg, melted butter, and maple syrup to the dry ingredients. Stir gently until just combined.
- In a skillet, cook the sausage patties over medium heat until browned and crispy.
- Prepare the eggs by scrambling or frying them according to your preference.
- Spoon a layer of muffin batter into each greased muffin cup, filling halfway.
- Add a sausage patty, a portion of eggs, and half a slice of cheese on top of the batter.
- Cover with more muffin batter until nearly full.
- Bake for 18–20 minutes or until golden brown.
- Allow to cool for a few minutes before removing from the muffin tin.
Notes
Make-ahead tips: Prepare muffins and filling separately and assemble in the morning. Avoid overmixing the batter for tender muffins.
