Ingredients

  • 1/2 cup whole milk
  • 1/4 cup honey
  • 1 tablespoon dried culinary lavender
  • 2 1/2 teaspoons gelatin powder
  • 3 tablespoons cold water
  • 1/4 teaspoon vanilla extract

Instructions

  1. In a saucepan, combine heavy cream, whole milk, honey, and dried lavender. Heat over medium heat until just simmering.
  2. Remove from heat and let steep for 15 minutes.
  3. In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
  4. Strain the cream mixture to remove lavender buds and return it to the saucepan.
  5. Add the bloomed gelatin and vanilla extract to the warm cream mixture, stirring until dissolved.
  6. Pour the mixture into serving glasses and refrigerate for at least 4 hours or until set.
  7. Serve chilled, optionally garnished with fresh lavender or honey.
