Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the melted butter, granulated sugar, and brown sugar until well combined.
  3. Add the eggs and vanilla extract, and mix until smooth.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the mini marshmallows.
  7. Grease a muffin tin and fill each cup with the brownie batter.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out with a few moist crumbs.
  9. Let cool before serving.
