- 1 cup mashed ripe bananas (about 2–3 bananas)
- 1 cup crushed pineapple, drained
- 1 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine flour, sugar, baking soda, salt, and cinnamon.
- In another bowl, whisk together oil, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the mashed bananas, crushed pineapple, and chopped pecans.
- Pour the batter into greased cake pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cakes cool completely before frosting.
- For the frosting, beat together cream cheese and butter, then add powdered sugar and vanilla until smooth.
- Frost the cooled cakes and enjoy!
Notes
- For added flavor, you can include shredded coconut in the batter.
- Make sure the pineapple is well-drained to avoid a soggy cake.
- This cake can be made a day in advance and stored in the refrigerator.
