A delicious and nutritious Indian-Spiced Lentil Bowl served with refreshing Raita, perfect for a wholesome meal.

- 1 cup lentils
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ginger, grated
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon chili powder
- 4 cups vegetable broth
- Salt to taste
- 1 cup yogurt
- 1 cucumber, diced
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh cilantro, chopped
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic and grated ginger, cooking for another minute.
- Stir in cumin, coriander, turmeric, and chili powder, cooking for 30 seconds until fragrant.
- Add the lentils and vegetable broth, bringing to a boil.
- Reduce heat and simmer for 20-25 minutes, or until lentils are tender.
- Season with salt to taste.
- In a separate bowl, mix yogurt, diced cucumber, mint, and cilantro to make the Raita.
- Serve the lentil bowl topped with Raita and additional herbs if desired.
Notes
- For a spicier dish, add more chili powder.
- This dish can be made ahead and stored in the refrigerator for up to 3 days.
- Raita can be adjusted with different herbs based on preference.
