Ingredients

  • 1 cup lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 4 cups vegetable broth
  • Salt to taste
  • 1 cup yogurt
  • 1 cucumber, diced
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  3. Add minced garlic and grated ginger, cooking for another minute.
  4. Stir in cumin, coriander, turmeric, and chili powder, cooking for 30 seconds until fragrant.
  5. Add the lentils and vegetable broth, bringing to a boil.
  6. Reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  7. Season with salt to taste.
  8. In a separate bowl, mix yogurt, diced cucumber, mint, and cilantro to make the Raita.
  9. Serve the lentil bowl topped with Raita and additional herbs if desired.

Notes

  • For a spicier dish, add more chili powder.
  • This dish can be made ahead and stored in the refrigerator for up to 3 days.
  • Raita can be adjusted with different herbs based on preference.
