Description
Delicious and fluffy pancakes inspired by traditional Spanish churros, coated in cinnamon sugar and served with a chocolate dipping sauce.

- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1/4 cup sugar (for coating)
- 1 teaspoon ground cinnamon (for coating)
- 1/2 cup chocolate chips (for dipping sauce)
- 1/4 cup heavy cream (for dipping sauce)
Instructions
- In a bowl, mix flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk together milk, egg, and melted butter.
- Combine the wet and dry ingredients until just mixed.
- Heat a non-stick skillet over medium heat and pour batter to form pancakes.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- In a small bowl, mix sugar and cinnamon for coating.
- Once pancakes are cooked, immediately coat them in the cinnamon sugar mixture.
- For the dipping sauce, heat heavy cream and stir in chocolate chips until melted and smooth.
- Serve pancakes warm with chocolate dipping sauce.
Notes
- For extra flavor, add vanilla extract to the batter.
- These pancakes are best served fresh but can be reheated in a toaster.
- Adjust the sugar in the coating to your taste.
