Ingredients

- 2 cups of mixed vegetables (broccoli, bell peppers, carrots)
- 1 tablespoon of miso paste
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 teaspoon of ginger, grated
- 1 teaspoon of garlic, minced
- 1 tablespoon of rice vinegar
- 1 tablespoon of sesame seeds
- Cooked rice or quinoa for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix miso paste, soy sauce, sesame oil, ginger, garlic, and rice vinegar to create the glaze.
- Toss the mixed vegetables in the miso glaze until well coated.
- Spread the vegetables on a baking sheet and roast for 20-25 minutes until tender.
- Serve the roasted veggies over cooked rice or quinoa, and sprinkle with sesame seeds.
