Instructions

  1. Separate the egg yolks and whites in two bowls.
  2. Whisk the egg yolks with milk, sugar, and vanilla until smooth.
  3. Sift in the flour and baking powder, stirring gently to combine.
  4. Beat the egg whites until soft peaks form, then gradually add sugar until stiff peaks are achieved.
  5. Fold the whipped egg whites into the yolk mixture gently.
  6. Heat a non-stick pan over low heat, lightly greased with oil or butter.
  7. Pour pancake batter onto the pan using a ring mold.
  8. Cover with a lid and cook for 3-5 minutes on each side until golden brown.
  9. Stack the pancakes with fresh fruits, maple syrup, and whipped cream.
