Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup cooked sausage, crumbled
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, bring water to a boil and blanch the broccoli and cauliflower for 3-4 minutes.
  3. Drain the vegetables and set aside.
  4. In a mixing bowl, combine heavy cream, garlic, salt, and pepper.
  5. Add the cooked sausage and half of the cheddar cheese to the cream mixture.
  6. In a baking dish, layer the blanched broccoli and cauliflower, then pour the cream mixture over the top.
  7. Sprinkle the remaining cheddar cheese and Parmesan cheese on top.
  8. Bake for 25-30 minutes or until the cheese is bubbly and golden brown.

Notes

  • For a spicier version, use spicy sausage.
  • Feel free to add other low-carb vegetables.
  • This dish can be made ahead of time and reheated.
