Ingredients

  • 4 cups chicken broth
  • 1 cup almond flour
  • 1/2 cup cream cheese
  • 2 large eggs
  • 1 tsp baking powder
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 cups mixed vegetables (optional)

Instructions

  1. Boil the broth: In a large pot, bring your chicken broth to a boil. Add the chicken thighs and cook for 20 minutes. Remove and shred the chicken.
  2. Prepare the dumpling dough: In a mixing bowl, combine almond flour, cream cheese, eggs, baking powder, garlic powder, onion powder, salt, and pepper. Mix until a soft dough forms.
  3. Add the dumplings: Drop spoonfuls of the dough into the boiling broth.
