- 1 lb chicken thighs
- 4 cups chicken broth
- 1 cup almond flour
- 1/2 cup cream cheese
- 2 large eggs
- 1 tsp baking powder
- Salt and pepper to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 cups mixed vegetables (optional)
Instructions
- Boil the broth: In a large pot, bring your chicken broth to a boil. Add the chicken thighs and cook for 20 minutes. Remove and shred the chicken.
- Prepare the dumpling dough: In a mixing bowl, combine almond flour, cream cheese, eggs, baking powder, garlic powder, onion powder, salt, and pepper. Mix until a soft dough forms.
- Add the dumplings: Drop spoonfuls of the dough into the boiling broth.
- Incorporate vegetables: If using, add mixed vegetables and cook for another 10 minutes.
- Mix in the shredded chicken: Stir the shredded chicken into the pot and heat through.
