Description

Crispy roll-ups inspired by the classic Reuben sandwich, combining rich flavors in a low-carb treat.


Ingredients

  • 2 cups Shredded Swiss Cheese
  • 8 slices Corned Beef
  • 1 cup Sauerkraut
  • 1/2 cup Mayonnaise
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Sugar-Free Ketchup
  • 1 tablespoon Swerve Confectioner’s Sugar
  • 1 teaspoon Horseradish Sauce
  • 1 teaspoon Paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your baking sheet lined with parchment paper.
  3. Melt the cheese and corned beef in a microwave-safe bowl.
  4. Create the filling by mixing the sauerkraut, mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve, horseradish, and paprika.
  5. Assemble the roll-ups with cheese mixture and sauerkraut mixture, then roll and place seam-side down on the baking sheet.
  6. Bake for 10-12 minutes until golden and crispy.
  7. Serve warm and enjoy!
