Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup unsalted butter
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together ground beef, Parmesan cheese, almond flour, egg, garlic, salt, black pepper, and parsley in a large bowl.
  3. Shape the mixture into meatballs, roughly 1 inch in diameter.
  4. Place the meatballs on a baking sheet, spaced evenly.
  5. Bake for 15-20 minutes until golden brown.
  6. Meanwhile, melt the butter and olive oil in a pan over medium heat.
  7. Add the baked meatballs to the pan, cooking for an additional 2-3 minutes in the garlic butter sauce.
  8. Serve hot with your favorite sides.

Notes

For best results, chill the ground beef or turkey before mixing to help retain shape. Can be prepared ahead and stored in the fridge.
