Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 ripe bananas, mashed
  • 1 cup whipped cream
  • ½ cup chocolate syrup
  • ½ cup crushed pineapple, drained
  • ½ cup chopped nuts (optional)
  • Maraschino cherries for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease three 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the mashed bananas and vanilla extract.
  5. In another bowl, combine the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the banana mixture, alternating with buttermilk, and mix until just combined.
  7. Divide the batter evenly among the prepared cake pans.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. Once cooled, layer the cakes with whipped cream, chocolate syrup, and crushed pineapple in between each layer.
  11. Top the cake with additional whipped cream, nuts, and maraschino cherries.

Notes

  • For a richer flavor, use brown sugar instead of granulated sugar.
  • Make sure the bananas are very ripe for the best taste.
  • This cake can be made a day in advance and stored in the refrigerator.
