- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup sour cream
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter, then press the mixture into the bottom of a lined muffin tin.
- In another bowl, beat the cream cheese until smooth, then add sugar, sour cream, lemon juice, lemon zest, and vanilla extract, mixing until well combined.
- Pour the cheesecake mixture over the crust in the muffin tin.
- Bake for 15-20 minutes or until the edges are set but the center is slightly jiggly.
- Remove from the oven and let cool, then refrigerate for at least 2 hours before serving.
Notes
- For a stronger lemon flavor, add more lemon zest.
- These bites can be topped with whipped cream or fresh berries for added decoration.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
