Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter, then press the mixture into the bottom of a lined muffin tin.
  3. In another bowl, beat the cream cheese until smooth, then add sugar, sour cream, lemon juice, lemon zest, and vanilla extract, mixing until well combined.
  4. Pour the cheesecake mixture over the crust in the muffin tin.
  5. Bake for 15-20 minutes or until the edges are set but the center is slightly jiggly.
  6. Remove from the oven and let cool, then refrigerate for at least 2 hours before serving.
