Instructions
- Preheat the oven: Set your oven to 350°F (175°C) and prepare a 15×10-inch jelly roll pan by greasing it and lining it with parchment paper.
- Mix dry ingredients: In a bowl, whisk together the flour, baking powder, and salt until well combined.
- Beat the eggs and sugar: In another bowl, beat the eggs with granulated sugar until thick, pale, and fluffy. This can take about 5–7 minutes.
- Combine ingredients: Gradually fold the flour mixture into the egg mixture to keep it airy. Then, add melted butter, lemon juice, and lemon zest, folding until just combined.
- Bake: Pour the batter into the prepared pan, spreading it evenly. Bake for 10-12 minutes, until golden and springy to the touch.
- Cool and roll: While the cake bakes, dust a clean kitchen towel with powdered sugar. Once out of the oven, invert the cake onto the towel, peel away the parchment, and carefully roll it up with the towel. Allow it to cool completely.
- Prepare the filling: In a clean bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
- Fill the cake: Unroll the cooled cake gently and spread the whipped cream filling over the surface. Re-roll the cake carefully without the towel.
- Glaze and serve: Mix powdered sugar with lemon juice until smooth for the glaze. Drizzle it over the rolled cake, slice, and serve, relishing the bright flavors!
