Ingredients

  • 1 lb chicken breast
  • 1 cup quinoa
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a saucepan, combine quinoa and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until liquid is absorbed.
  3. While quinoa is cooking, heat olive oil in a skillet over medium heat.
  4. Season chicken breasts with lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
  5. Add chicken to the skillet and cook for 6-7 minutes on each side or until fully cooked.
  6. Remove chicken from skillet and let it rest for a few minutes before slicing.
  7. Fluff the quinoa with a fork and divide it into bowls.
  8. Top quinoa with sliced chicken and garnish with fresh parsley.

  • For added flavor, marinate the chicken for a few hours before cooking.
