- 1 lb chicken breast
- 1 cup quinoa
- 2 cups chicken broth
- 2 tablespoons olive oil
- 1 lemon (juiced and zested)
- 2 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the quinoa under cold water and drain.
- In a saucepan, combine quinoa and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until liquid is absorbed.
- While quinoa is cooking, heat olive oil in a skillet over medium heat.
- Season chicken breasts with lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
- Add chicken to the skillet and cook for 6-7 minutes on each side or until fully cooked.
- Remove chicken from skillet and let it rest for a few minutes before slicing.
- Fluff the quinoa with a fork and divide it into bowls.
- Top quinoa with sliced chicken and garnish with fresh parsley.
Notes
- For added flavor, marinate the chicken for a few hours before cooking.
- This dish can be served warm or cold.
