- 6 large eggs
- 1/2 cup cooked lobster meat, chopped
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Chives for garnish
Instructions
- Hard boil the eggs by placing them in a pot of cold water, bringing to a boil, then simmering for 10-12 minutes.
- Remove the eggs from the pot and place them in an ice bath to cool.
- Once cooled, peel the eggs and slice them in half lengthwise.
- Remove the yolks and place them in a mixing bowl.
- Add the chopped lobster meat, mayonnaise, Dijon mustard, lemon juice, salt, and pepper to the yolks and mix until smooth.
- Fill the egg white halves with the lobster yolk mixture.
- Garnish with chopped chives before serving.
Notes
- For a spicier kick, consider adding a dash of hot sauce to the filling.
