  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh mango purée (or dried mango bits)
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, and salt.
  3. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until creamy and smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the mango purée or bits.
  7. Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them two inches apart.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For best flavor, refrigerate the dough overnight. Cookies can be made gluten-free with a 1:1 gluten-free baking mix.
