- 1 cup fresh mango purée (or dried mango bits)
- 1/2 teaspoon ground cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking soda, and salt.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until creamy and smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the mango purée or bits.
- Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them two inches apart.
- Bake for 10-12 minutes or until the edges are golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For best flavor, refrigerate the dough overnight. Cookies can be made gluten-free with a 1:1 gluten-free baking mix.
