Ingredients

  • 8 oz pasta
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup spinach
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Add chicken breasts, season with salt and pepper, and cook until golden brown on both sides.
  5. Remove chicken from the skillet and set aside.
  6. In the same skillet, add sun-dried tomatoes and chicken broth; bring to a simmer.
  7. Stir in heavy cream and Parmesan cheese, mixing well.
  8. Add spinach and cooked pasta, stirring to combine.
  9. Slice the chicken and place it on top of the pasta mixture.
  10. Serve hot and enjoy!
