Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons fresh dill, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • Fresh dill for garnish

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, dill, garlic, salt, and pepper.
  2. Place chicken breasts in a resealable bag and pour marinade over them. Seal and refrigerate for at least 30 minutes.
  3. Preheat grill to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes on each side or until fully cooked.
  4. Let the chicken rest for a few minutes before slicing.
  5. In a large bowl, combine cooked quinoa or rice, cherry tomatoes, cucumber, red onion, and feta cheese.
  6. Top the grain mixture with sliced chicken and garnish with fresh dill.
  7. Serve immediately and enjoy!
