Ingredients

  • 1 cup chickpeas, drained and rinsed
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Start by preparing all the vegetables and ingredients.
  2. In a jar, layer the ingredients starting with the cherry tomatoes at the bottom.
  3. Add the cucumber, bell pepper, red onion, chickpeas, feta cheese, and olives in layers.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the salad layers in the jar.
  6. Seal the jar and refrigerate until ready to serve.
  7. Shake well before serving to mix the dressing with the salad.
