Ingredients

- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, thinly sliced
- 1 cup chickpeas, drained and rinsed
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Start by preparing all the vegetables and ingredients.
- In a jar, layer the ingredients starting with the cherry tomatoes at the bottom.
- Add the cucumber, bell pepper, red onion, chickpeas, feta cheese, and olives in layers.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the salad layers in the jar.
- Seal the jar and refrigerate until ready to serve.
- Shake well before serving to mix the dressing with the salad.
