A delicious and unique twist on traditional lasagna, featuring layers of tortillas, seasoned ground beef, and a blend of Mexican cheeses.

- 12 corn tortillas
- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups shredded Mexican cheese blend
- 1 cup salsa
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add black beans, diced tomatoes, cumin, chili powder, salt, and pepper to the skillet. Stir to combine and heat through.
- In a baking dish, spread a layer of salsa on the bottom.
- Layer 4 tortillas over the salsa, followed by half of the beef mixture and a third of the cheese.
- Repeat the layers, ending with tortillas on top.
- Spread remaining salsa over the top layer and sprinkle with the remaining cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
- Let it cool for a few minutes before serving. Garnish with fresh cilantro.
Notes
- For a vegetarian option, substitute ground beef with sautéed vegetables or lentils.
- Feel free to add more layers or ingredients like corn or jalapeños for extra flavor.
- This dish can be made ahead of time and stored in the refrigerator before baking.
