- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1/2 cup sour cream
- 2 large eggs

- 1 teaspoon cocoa powder
- 1/2 teaspoon baking powder

Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix crushed graham crackers and melted butter until combined.
- Press the mixture into the bottom of mini cheesecake pans.
- In a separate bowl, beat cream cheese until smooth.
- Add powdered sugar, sour cream, eggs, vanilla extract, red food coloring, cocoa powder, baking powder, and salt. Mix until well combined.
- Pour the cheesecake mixture over the crust in the mini pans.
- Bake for 20-25 minutes or until set.
- Let cool, then refrigerate for at least 2 hours before serving.
Notes
