Instructions

  1. Rinse the quinoa under cold water and cook according to package instructions.
  2. In a large bowl, combine the cooked quinoa, chickpeas, red bell pepper, cucumber, red onion, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, cumin, paprika, salt, and pepper.
