Ingredients

- 1 cup quinoa
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water and cook according to package instructions.
- In a large bowl, combine the cooked quinoa, chickpeas, red bell pepper, cucumber, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, cumin, paprika, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to combine.
- Serve chilled or at room temperature.

- Feel free to add other vegetables like carrots or spinach.
- This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
