Ingredients

  • ½ cup unsalted butter, melted
  • 2 cups fresh raspberries
  • 1 cup heavy whipping cream
  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 tsp vanilla extract

Instructions

  1. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a pie dish to form the crust.
  2. In a separate bowl, beat the cream cheese until smooth, then add powdered sugar and vanilla extract, mixing until well combined.
  3. In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  4. Fold in the fresh raspberries, reserving some for garnish.
  5. Pour the raspberry cream mixture into the prepared crust and smooth the top.
  6. Refrigerate for at least 4 hours or until set.
  7. Garnish with remaining raspberries before serving.

  • For a sweeter pie, adjust the amount of powdered sugar to taste.
