- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with Italian seasoning, salt, and pepper.
- Add chicken to the skillet and cook until golden brown on both sides, about 6-7 minutes per side.
- Remove chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Add cherry tomatoes and spinach, cooking until spinach wilts.
- Pour in heavy cream and stir in Parmesan cheese until melted and combined.
- Return chicken to the skillet, spooning sauce over the top.
- Simmer for an additional 5 minutes until chicken is cooked through.
- Garnish with fresh basil before serving.
Notes
- For a lighter version, substitute heavy cream with half-and-half.
- Serve with pasta or crusty bread to soak up the sauce.
- Can be made ahead and reheated for meal prep.
