- 1 lb chicken breast, diced
- 2 cups broccoli florets
- 1 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 cup chicken broth
- 2 tablespoons lime juice
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- In a large pot, heat sesame oil over medium heat.
- Add diced chicken and cook until browned.
- Stir in garlic and ginger, cooking for an additional minute.
- Add broccoli and cook for 2-3 minutes until slightly tender.
- In a bowl, mix peanut butter, soy sauce, honey, chicken broth, and lime juice.
- Pour the peanut sauce over the chicken and broccoli, stirring to combine.
- Simmer for 5-7 minutes until the sauce thickens and chicken is cooked through.
- Season with salt and pepper to taste before serving.
Notes
- Serve with rice or noodles for a complete meal.
- Adjust the spice level by adding chili flakes if desired.
- Leftovers can be stored in the refrigerator for up to 3 days.
