Ingredients

  • 2 cups broccoli florets
  • 1 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 cup chicken broth
  • 2 tablespoons lime juice
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat sesame oil over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in garlic and ginger, cooking for an additional minute.
  4. Add broccoli and cook for 2-3 minutes until slightly tender.
  5. In a bowl, mix peanut butter, soy sauce, honey, chicken broth, and lime juice.
  6. Pour the peanut sauce over the chicken and broccoli, stirring to combine.
  7. Simmer for 5-7 minutes until the sauce thickens and chicken is cooked through.
  8. Season with salt and pepper to taste before serving.
