Ingredients

- 1 cup tempeh, cubed
- 1/2 cup peach BBQ sauce
- 1 cup cooked quinoa
- 1 cup mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, sliced
- 1 avocado, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill or a grill pan over medium heat.
- In a bowl, marinate the cubed tempeh in peach BBQ sauce for at least 30 minutes.
- Grill the marinated tempeh for about 5-7 minutes on each side, until golden brown.
- In a serving bowl, layer the cooked quinoa, mixed greens, cherry tomatoes, and red onion.
- Top with grilled tempeh and sliced avocado.
- Drizzle with olive oil and season with salt and pepper to taste.
- Serve immediately and enjoy!
Notes
- For a spicier kick, add some chili flakes to the BBQ sauce.
- This dish can be served warm or cold.
- Feel free to substitute quinoa with brown rice or any grain of your choice.
