- 1 cup granulated sugar
- 1/4 cup bourbon
- 1 tablespoon lemon juice
- 1 packet pectin (1.75 oz)
Instructions
- In a large pot, combine the chopped peaches, sugar, and lemon juice. Stir well and let sit for about 30 minutes to allow the juices to release.
- Add the pectin to the peach mixture and bring to a boil over medium heat, stirring constantly.
- Once boiling, add the bourbon and continue to boil for an additional 5 minutes, stirring frequently.
- Remove from heat and skim off any foam that forms on the surface.
- Pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace. Seal with lids and process in a boiling water bath for 10 minutes.
- Let the jars cool completely before storing them in a cool, dark place.
