Description

Ingredients

  • 4 cups ripe peaches, peeled and chopped
  • 1 cup granulated sugar
  • 1/4 cup bourbon
  • 1 tablespoon lemon juice
  • 1 packet pectin (1.75 oz)

Instructions

  1. In a large pot, combine the chopped peaches, sugar, and lemon juice. Stir well and let sit for about 30 minutes to allow the juices to release.
  2. Add the pectin to the peach mixture and bring to a boil over medium heat, stirring constantly.
  3. Once boiling, add the bourbon and continue to boil for an additional 5 minutes, stirring frequently.
  4. Remove from heat and skim off any foam that forms on the surface.
  5. Pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace. Seal with lids and process in a boiling water bath for 10 minutes.
  6. Let the jars cool completely before storing them in a cool, dark place.
