Ingredients

  • 1 tablespoon lemon juice

  • 1 egg, beaten (for egg wash)
  • Oil for frying

Instructions

  1. In a bowl, combine diced peaches, sugar, lemon juice, and cinnamon. Mix well and set aside.
  2. Roll out the pie crusts and cut them into circles.
  3. Place a spoonful of the peach mixture in the center of each circle.
  4. Fold the dough over to create a half-moon shape and seal the edges with a fork.
  5. Heat oil in a frying pan over medium heat.
  6. Fry the hand pies until golden brown on both sides, about 3-4 minutes per side.
  7. Remove from oil and place on paper towels to drain excess oil.
  8. Brush with beaten egg for a shiny finish, if desired.
