Ingredients

- 4 cups fresh peaches, peeled and chopped
- 1 cup jalapeños, seeded and finely chopped
- 1/4 cup lemon juice
- 1 package (1.75 oz) fruit pectin
- 5 cups granulated sugar
Instructions
- Prepare jars and lids for canning.
- In a large pot, combine chopped peaches, jalapeños, and lemon juice.
- Add fruit pectin and stir well.
- Bring the mixture to a boil over medium heat, stirring constantly.
- Add sugar all at once, stirring until dissolved.
- Bring the mixture back to a rolling boil and boil for 1 minute.
- Remove from heat and skim off any foam.
- Pour hot jam into prepared jars, leaving 1/4 inch headspace.
- Seal jars with lids and process in a boiling water bath for 10 minutes.
- Let jars cool completely before storing.
