Description

A delightful blend of sweet peaches and spicy jalapeños, this summer pepper jam is perfect for spreading on toast or pairing with cheese.


Ingredients

  • 4 cups fresh peaches, peeled and chopped
  • 1 cup jalapeños, seeded and finely chopped
  • 1/4 cup lemon juice
  • 1 package (1.75 oz) fruit pectin
  • 5 cups granulated sugar

Instructions

  1. Prepare jars and lids for canning.
  2. In a large pot, combine chopped peaches, jalapeños, and lemon juice.
  3. Add fruit pectin and stir well.
  4. Bring the mixture to a boil over medium heat, stirring constantly.
  5. Add sugar all at once, stirring until dissolved.
  6. Bring the mixture back to a rolling boil and boil for 1 minute.
  7. Remove from heat and skim off any foam.
  8. Pour hot jam into prepared jars, leaving 1/4 inch headspace.
  9. Seal jars with lids and process in a boiling water bath for 10 minutes.
  10. Let jars cool completely before storing.
