Ingredients

- 2 cups cooked chicken, shredded
- 1 package (9 oz) cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 1 cup bell peppers, sliced
- 1/2 cup pesto sauce
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions; drain and set aside.
- In a large skillet, add the shredded chicken, cherry tomatoes, broccoli, and bell peppers.
- Cook over medium heat for about 5-7 minutes until the veggies are tender.
- Add the cooked tortellini and pesto sauce to the skillet; stir to combine.
- Cook for an additional 2-3 minutes until heated through.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese.
Notes
- Feel free to add any other vegetables you have on hand.
- This dish can be made ahead of time and reheated for a quick meal.
- For a creamier sauce, add a splash of heavy cream to the pesto.
