Ingredients

  • 1 lb Brussels sprouts
  • 1 cup pistachios, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1/2 cup cranberry sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the Brussels sprouts and cut them in half.
  3. In a bowl, mix the chopped pistachios, breadcrumbs, Parmesan cheese, salt, and pepper.
  4. Drizzle the Brussels sprouts with olive oil and toss to coat.
  5. Roll the Brussels sprouts in the pistachio mixture until fully coated.
  6. Place the coated Brussels sprouts on a baking sheet and bake for 20-25 minutes until golden brown.
  7. While the Brussels sprouts are baking, heat the cranberry sauce in a small saucepan until warm.
  8. Once the Brussels sprouts are done, remove them from the oven and drizzle with the warm cranberry sauce before serving.

Notes

  • For a vegan version, omit the Parmesan cheese or use a vegan alternative.
  • Feel free to add spices to the pistachio mixture for extra flavor.
  • These skewers can be served warm or at room temperature.
