A delicious and unique appetizer featuring Brussels sprouts coated in a crunchy pistachio crust, drizzled with a sweet cranberry sauce.

- 1 lb Brussels sprouts
- 1 cup pistachios, chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1/2 cup cranberry sauce
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Trim the Brussels sprouts and cut them in half.
- In a bowl, mix the chopped pistachios, breadcrumbs, Parmesan cheese, salt, and pepper.
- Drizzle the Brussels sprouts with olive oil and toss to coat.
- Roll the Brussels sprouts in the pistachio mixture until fully coated.
- Place the coated Brussels sprouts on a baking sheet and bake for 20-25 minutes until golden brown.
- While the Brussels sprouts are baking, heat the cranberry sauce in a small saucepan until warm.
- Once the Brussels sprouts are done, remove them from the oven and drizzle with the warm cranberry sauce before serving.
Notes
- For a vegan version, omit the Parmesan cheese or use a vegan alternative.
- Feel free to add spices to the pistachio mixture for extra flavor.
- These skewers can be served warm or at room temperature.
