Ingredients

  • 2 lbs pork shoulder
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) sauerkraut, drained
  • 1 cup chicken broth
  • 1 tsp caraway seeds
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a large Dutch oven, heat some oil over medium heat and brown the pork shoulder on all sides.
  3. Remove the pork and set aside. In the same pot, sauté the onion and garlic until softened.
  4. Add the sauerkraut, chicken broth, and caraway seeds to the pot.
  5. Place the pork back into the pot, season with salt and pepper, and cover.
  6. Bake in the preheated oven for about 2.5 to 3 hours, or until the pork is tender.
  7. Remove from the oven, let it rest for a few minutes, then slice and serve with the sauerkraut.

Notes

  • For extra flavor, marinate the pork overnight with spices.
  • Serve with mashed potatoes or crusty bread for a complete meal.
  • This dish can be made in a slow cooker as well.
