Ingredients

- 2 lbs pork shoulder
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) sauerkraut, drained
- 1 cup chicken broth
- 1 tsp caraway seeds
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (165°C).
- In a large Dutch oven, heat some oil over medium heat and brown the pork shoulder on all sides.
- Remove the pork and set aside. In the same pot, sauté the onion and garlic until softened.
- Add the sauerkraut, chicken broth, and caraway seeds to the pot.
- Place the pork back into the pot, season with salt and pepper, and cover.
- Bake in the preheated oven for about 2.5 to 3 hours, or until the pork is tender.
- Remove from the oven, let it rest for a few minutes, then slice and serve with the sauerkraut.
Notes
- For extra flavor, marinate the pork overnight with spices.
- Serve with mashed potatoes or crusty bread for a complete meal.
- This dish can be made in a slow cooker as well.
