Ingredients

  • 2 cans of refrigerated cinnamon rolls
  • 1 cup of pumpkin puree
  • 1/2 cup of milk
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/4 teaspoon of salt
  • 1/2 cup of brown sugar
  • 1/2 cup of chopped pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the pumpkin puree, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt.
  3. Cut the cinnamon rolls into quarters and add them to the pumpkin mixture, stirring to coat.
  4. Pour the mixture into a greased baking dish and sprinkle with brown sugar and pecans.
  5. Bake for 25-30 minutes or until golden brown and set.
  6. Allow to cool slightly before serving. Drizzle with icing from the cinnamon roll cans if desired.
