A delicious and easy-to-make pumpkin cinnamon roll bake that combines the flavors of fall with the comfort of cinnamon rolls.

- 2 cans of refrigerated cinnamon rolls
- 1 cup of pumpkin puree
- 1/2 cup of milk
- 2 eggs
- 1 teaspoon of vanilla extract
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of nutmeg
- 1/4 teaspoon of salt
- 1/2 cup of brown sugar
- 1/2 cup of chopped pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the pumpkin puree, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt.
- Cut the cinnamon rolls into quarters and add them to the pumpkin mixture, stirring to coat.
- Pour the mixture into a greased baking dish and sprinkle with brown sugar and pecans.
- Bake for 25-30 minutes or until golden brown and set.
- Allow to cool slightly before serving. Drizzle with icing from the cinnamon roll cans if desired.
Notes
- For a richer flavor, use homemade cinnamon rolls.
- This dish can be made ahead of time and stored in the refrigerator before baking.
