Ingredients

  • 1 cup buttermilk

  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • 1 cup fresh strawberries, sliced

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, combine the oil, buttermilk, eggs, food coloring, vanilla, and vinegar.
  4. Gradually add the wet ingredients to the dry ingredients and mix until smooth.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Let the cake cool completely before removing it from the pan.
  7. In a separate bowl, beat the cream cheese and powdered sugar until smooth.
  8. In another bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
  9. Spread the cheesecake mixture over the cooled red velvet cake.
  10. Top with sliced strawberries and refrigerate for at least 2 hours before serving.
