Ingredients

- 2 cups kale, chopped
- 1 small pumpkin, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon salt

- 1/4 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 1 tablespoon balsamic vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the pumpkin cubes with olive oil, salt, and pepper.
- Spread the pumpkin on a baking sheet and roast for 25-30 minutes until tender.
- In a large bowl, combine the chopped kale and balsamic vinegar.
- Add the roasted pumpkin, feta cheese, and walnuts to the bowl.
- Toss gently to combine all ingredients.
