Ingredients

  • 2 lbs ripe tomatoes, halved
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup fresh basil leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 slices of bread
  • 4 slices of cheese (cheddar or your choice)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the halved tomatoes, chopped onion, and minced garlic on a baking sheet. Drizzle with olive oil, and season with salt and pepper.
  3. Roast in the oven for 25-30 minutes until the tomatoes are caramelized.
  4. Transfer the roasted vegetables to a pot, add vegetable broth, and bring to a simmer.
  5. Add fresh basil leaves and blend the soup until smooth.
  6. For the grilled cheese, heat a skillet over medium heat. Butter one side of each slice of bread.
  7. Place cheese between two slices of bread, buttered side out, and grill until golden brown on both sides.
  8. Serve the soup hot with grilled cheese sandwiches on the side.
