Ingredients

- 2 lbs ripe tomatoes, halved
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 cups vegetable broth
- 1 cup fresh basil leaves
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 slices of bread
- 4 slices of cheese (cheddar or your choice)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the halved tomatoes, chopped onion, and minced garlic on a baking sheet. Drizzle with olive oil, and season with salt and pepper.
- Roast in the oven for 25-30 minutes until the tomatoes are caramelized.
- Transfer the roasted vegetables to a pot, add vegetable broth, and bring to a simmer.
- Add fresh basil leaves and blend the soup until smooth.
- For the grilled cheese, heat a skillet over medium heat. Butter one side of each slice of bread.
- Place cheese between two slices of bread, buttered side out, and grill until golden brown on both sides.
- Serve the soup hot with grilled cheese sandwiches on the side.
Notes
- For a creamier soup, add a splash of cream or milk before blending.
- Feel free to add spices like red pepper flakes for a kick.
