Ingredients
Scale
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 5 large egg yolks
- 2 tsp rose water
- 1/2 cup chopped roasted pistachios (unsalted)
- 1/8 tsp salt
Instructions
- Heat the cream and milk in a medium saucepan over medium heat until it begins to steam.
- Whisk the egg yolks and sugar in a separate bowl until pale and thick.
- Temper the egg mixture by slowly pouring in the warm cream mixture while whisking continuously.
- Cook the combined mixture in the saucepan over low heat, stirring constantly until thickened.
- Flavor with rose water and salt, then remove from heat.
- Chill the mixture in a bowl, covered, in the refrigerator for at least 2 hours.
- Churn the chilled custard in an ice cream maker, adding pistachios in the last few minutes.
- Freeze the churned ice cream in a container for at least 4 hours before serving.
Notes
You can substitute rose water with vanilla extract or other nuts like almonds for different flavors.
