Description

A luxurious and creamy rose pistachio ice cream that combines floral sweetness with nutty crunch, perfect for summer days.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 5 large egg yolks
  • 2 tsp rose water
  • 1/2 cup chopped roasted pistachios (unsalted)
  • 1/8 tsp salt

Instructions

  1. Heat the cream and milk in a medium saucepan over medium heat until it begins to steam.
  2. Whisk the egg yolks and sugar in a separate bowl until pale and thick.
  3. Temper the egg mixture by slowly pouring in the warm cream mixture while whisking continuously.
  4. Cook the combined mixture in the saucepan over low heat, stirring constantly until thickened.
  5. Flavor with rose water and salt, then remove from heat.
  6. Chill the mixture in a bowl, covered, in the refrigerator for at least 2 hours.
  7. Churn the chilled custard in an ice cream maker, adding pistachios in the last few minutes.
  8. Freeze the churned ice cream in a container for at least 4 hours before serving.

Notes

You can substitute rose water with vanilla extract or other nuts like almonds for different flavors.
