- 1 cup dark rum
- 1 cup brown sugar

Instructions
- In a bowl, combine the dark rum, brown sugar, and cinnamon. Mix well.
- Add the pineapple slices to the rum mixture and let them soak for at least 1 hour.
- In a separate bowl, mix the flour and coconut flakes.
- Heat oil in a frying pan over medium heat.
- Remove the pineapple slices from the rum mixture, allowing excess liquid to drip off.
- Dredge the pineapple slices in the flour and coconut mixture until well coated.
- Fry the coated pineapple slices in the hot oil until golden brown, about 2-3 minutes on each side.
- Remove from oil and drain on paper towels.
- Serve warm, optionally drizzled with additional rum sauce.
