  2. Add the pineapple slices to the rum mixture and let them soak for at least 1 hour.
  3. In a separate bowl, mix the flour and coconut flakes.
  4. Heat oil in a frying pan over medium heat.
  5. Remove the pineapple slices from the rum mixture, allowing excess liquid to drip off.
  6. Dredge the pineapple slices in the flour and coconut mixture until well coated.
  7. Fry the coated pineapple slices in the hot oil until golden brown, about 2-3 minutes on each side.
  8. Remove from oil and drain on paper towels.
