- 1 lb ground beef
- 1 medium sweet potato, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tsp Worcestershire sauce
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 1 package of puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, cook the ground beef over medium heat until browned.
- Add the chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in the diced sweet potato, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Simmer for about 15 minutes, or until the sweet potato is tender.
- Roll out the puff pastry and cut into circles.
- Place a spoonful of the beef and sweet potato mixture in the center of each circle.
- Fold the pastry over and seal the edges with a fork.
- Brush the tops with beaten egg.
- Bake in the preheated oven for 20-25 minutes, or until golden brown.
Notes
- Feel free to add other vegetables like carrots or peas for extra flavor.
- These mini pies can be made ahead of time and frozen before baking.
