Savory Irish Beef & Sweet Potato Mini Pies are a delicious and hearty dish, perfect for a comforting meal or a delightful snack.


Ingredients

  • 1 lb ground beef
  • 1 medium sweet potato, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 1 package of puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, cook the ground beef over medium heat until browned.
  3. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  4. Stir in the diced sweet potato, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  5. Simmer for about 15 minutes, or until the sweet potato is tender.
  6. Roll out the puff pastry and cut into circles.
  7. Place a spoonful of the beef and sweet potato mixture in the center of each circle.
  8. Fold the pastry over and seal the edges with a fork.
  9. Brush the tops with beaten egg.
  10. Bake in the preheated oven for 20-25 minutes, or until golden brown.
